Enjoy this easy and delicious hummus during this holiday season.
1 ½ cans chickpeas (approx. 400g), cooked, rinsed, drained
2 tbsp extra-virgin olive oil
2 tbsp sesame oil
1 garlic clove
Juice from 1 large lemon (more to taste)
½ tsp ground cumin
1 pinch of salt (or to taste)
1 tbsp extra-virgin olive oil
1 tbsp paprika
Seeds of 1 pomegranate
1 sprig of fresh parsley, chopped (more to taste)
Add the chickpeas, olive oil, sesame oil, garlic, lemon juice, ground cumin and salt to a blender or food processor. Blend until very smooth, adding additional lemon juice or cold water if needed to blend.
Transfer the mixture into a serving bowl and add the olive oil, paprika, pomegranate seeds and chopped parsley. Serve with vegetables or pita bread.
