This quick and easy recipe can be made a day or a few hours in advance, perfect for a quick breakfast or a snack during the day! Chia seeds are a real treasure from a nutritional point of view, as they are full of proteins, omega 3, they’re gentle on the intestinal mucosa and they fight against inflammation.

Ingredients

Pudding

2-3 tbs Chia Seeds
Vegetable milk or cream

Toppings (optional)

Oilseeds
Coconut shavings
Raw cocoa
Honey or maple sirup
Frozen/dried fruit or seasonal fresh fruits

The variations of the toppings are endless, take your favourite ones and adapt them to the season!

Preparations

Step 1

Put 2 or 3 tablespoons of chia seeds in a bowl the night before with a vegetable milk or cream, stir well for 2 minutes (so the seeds do not stick together) and leave to stand overnight (at room temperature or in the fridge). The next day the mixture should be thick and homogeneous.

Step 2

Before enjoying this treat in the morning, add oilseeds, coconut shavings or raw cocoa, 1 spoonful of honey or maple syrup, dried fruit (organic), fresh fruit such as bananas, or frozen or fresh red fruit in summer, fresh pollen, etc.
