Ingredients

200 g Swiss tomatoes (cherry or heirloom), chopped

medium Swiss cucumber, sliced

salty local cheese, like gruyère

small  red onion, thinly sliced

walnuts, roughly chopped (optional substitute for olives)Fresh herbs (oregano, basil, or chives), finely chopped

For the dressing:
3 tbsp cold-pressed rapeseed oil
1 tbsp
fresh lemon juice or apple cider vinegar Salt & freshly ground black pepper

Preparations

Step 1

Chop the tomatoes and cucumber into bite-sized pieces. Thinly slice the red onion. Cube the cheese.

Step 2

In a large salad bowl, gently toss the tomatoes, cucumber, red onion, cheese, and walnuts (or olives if you prefer).

Step 3

Sprinkle the fresh herbs over the salad.

Step 4

In a small bowl, whisk together the rapeseed oil, lemon juice (or vinegar), salt, and pepper.

Step 5

Pour the dressing over the salad and toss lightly to combine. Chill briefly or serve immediately for a refreshing summer dish!
